Mexico - Jose Cienfuegos
Region: Huatusco, Veracruz
Farm: Las Trincheras
Cultivar: Bourbon & Garnica
Altitude: 1 350 m
Process: Washed, dried in concrete tanks
Taste notes: Cola, dark chocolate and sponge toffee
This coffee from Mexico is a great discovery! A beautiful micro-lot that brings us notes of cola (floral and herbal caramel) and dark chocolate. There is still a fresh side to it. An aftertaste of sponge taffy will leave you with a wonderful memory of this cup.
One of the things we love most about Mexico is the diversity of sub-regions, which are origins in their own right. We are delighted to present this coffee from Veracruz, a unique origin in many ways.
Jose Cienfuegos' cherries were processed at Ernesto Perez's Finca Fatima, which is both a farm and a mill.
The high altitudes of Veracruz give a slow ripening of the cherries due to the cooler weather. The town of Huatusco pushes the northern edge of the tropics, where even cooler, slightly wetter weather and the long cool nights during harvest slow the ripening of the cherries, creating an incredible density of flavor.
You will enjoy it in espresso and latte, but also in classic filter. A good everyday coffee.
