We’re eager to be able to offer a new Las Lajas Micromill harvest this year! Oscar and Francica are revolutionaries in specialty coffee, having truly perfected their drying and fermenting processes through the years. This lot is a lovely example of one of their more balanced lots: rich and almost creamy in texture, there’s a strong cocoa presence that is sure to comfort your taste buds. It harmonizes perfectly with the fruity, citrusy side this coffee offers. We taste mainly blueberries, some subtle hints of raspberries, and the smooth acidity of a fresh pomelo.
The Las Lajas Micromill is run by third-generation coffee producers Oscar and Francisca Chacón. They purchased their very own depulper in 2005, opening up their personal micromill out of desire for greater quality control. This couple is truly driven by passion. They have experimented with tons of variables over the years to master the art of coffee processing – and mastery they have certainly achieved. The micromill is becoming globally renowned for the owners’ incomparable and consistent cup qualities, as well as their innovative approaches to coffee processing. One of our most cherished green-coffee suppliers has an intimate and near-exclusive link with the Chacóns; this renders us lucky enough to have access to their harvests regularly. Harvests from the Las Lajas Micromill come with some of the most detailed info sheets on the market. We always know precisely how the coffee was uniquely and meticulously treated. In this case, this Yellow Honey lot was dried on raised beds for 3-4 days with minimal mucilage still covering the beans. The beans were turned hourly for all of those 3-4 days to ensure maximal uniformity. The final drying phase was completed in a greenhouse, where the beans were once again turned regularly.
Espresso fans, this one's for you! This coffee is at its best as a simple espresso shot - milk to each’s discretion. The coffee’s complexity is much more detectable extracted this way. It will also make for a smooth filter coffee, with a more subtle fruity-citrusy quality.
