    TASTING

    A rich, textured cup with an incredibly pronounced sweet quality. Lots of creamy chocolate and caramelized brown sugars. This coffee offers a silky sip that leaves a light citrusy aftertaste reminiscent of a delicious orange infused chocolate bar. A coffee so gourmet, it can almost qualify as a dessert (but without the abusive caloric intake!).

    ORIGIN

    Cafeco is a relatively new cooperative organization based in Nuevo Progreso, La Concordia, Chiapas, on the edge of the "El Triunfo" biosphere reserve, one of the most important forest reserves in the Americas. Most of Cafeco's members are young farmers who want to produce high quality coffees.

    The cooperative is managed by Jose Arguello Jr, owner of Finca Santa Cruz, which has won first place in the Mexican Cup of Excellence on many occasions. He is focused on developing new quality standards within the cooperative, such as raised bed drying, improved traceability, batch separation, as well as increased productivity. They also manage a composting operation to be able to provide high quality organic compost for distribution to members.

    Maintaining the shade trees in the biosphere reserve is incredibly important to the quality of coffee production. As a result, deforestation in the area is scorned upon and has become an abolished practice. 

    The Nuevo Paraiso harvest was dry fermented for 24-48 hours in concrete tanks before being washed and dried for 8-10 days on palm-fibre woven mats and patios.

    DRINKING

    In any brewing mode, you'll find this coffee to be a real sugar bomb. Perfect for a comforting latte or cappuccino, or a silky filter brew with lots of texture.
