    TASTE

    An exceptional coffee for all the right reasons. This lot from the Bajawa region on the island of Flores opens with a fresh, summery impression, carried by clear aromas of watermelon and an acidity reminiscent of green apple. The finish evokes Earl Grey tea, with a delicate and fragrant expression.

    This approach combines the clarity of a washed process with the aromatic intensity of an experimental fermentation. The result is expressive, creamy, and highly original, while retaining beautiful precision in the cup.

    ORIGIN

    Mahataman Coffee Bajawa is a specialty coffee project founded in 2016 in Bajawa by Ikang M. Hendri. Its goal is to improve the income of local producers through innovative farming and processing practices. Today, more than 110 small producers take part in the project.

    The coffee trees are grown in a traditional agroforestry system, under the shade of fruit and forest trees. This approach supports biodiversity, protects the soil, and contributes to the quality of the harvested cherries.

    For this lot, the cherries were depulped, then fermented with the integration of Nira yeast for 48 hours. They were then washed and dried according to a traditional washed coffee approach. The result is a fascinating meeting point between terroir, experimental fermentation, and the classic clarity of the washed process.

    BREWING 

    As an espresso, this coffee presents a soft expression and a thick texture. Green apple aromas are clearly present, with a cup that feels creamy and bright.

    As a cortado, it moves in a more indulgent and adventurous direction. The milk rounds out its profile and transforms its aromas into an experience reminiscent of gelato and certain herbal confections.

    As a filter coffee, it reveals its full scope. You’ll find a succession of refreshing aromas, a rich texture, and an intensity that may bring certain natural coffees to mind, while preserving the cleanliness and precision of a washed coffee. It is also a beautiful option for French press, where its creamy texture can fully shine.
