A touch of buttery caramel carries through the finish, creating a cup that's both elegant and comforting.
ORIGIN
In the mountains of La Cañada, in the state of Oaxaca, 90 families from the Mazatec community of San Isidro Zoquiapam grow this coffee at nearly 2,000 meters above sea level. They are part of Red 5 de Diciembre, a network bringing together more than 1,300 Indigenous smallholder farmers across 13 community groups.
The network's story began on December 5, 2014, amid a devastating coffee leaf rust (roya) outbreak that was destroying plantations and driving away international buyers. Faced with this crisis, producers chose to unite and focus on quality to secure their future.
Over the years, they refined their selective harvesting and processing techniques while achieving organic certification. In 2020, a partnership with Ensembles de Café finally allowed them to better capitalize on their efforts. Through rigorous cupping and lot selection, their finest coffees gained access to the specialty coffee market, earning premiums that reward their quality.
BREWING
This coffee reveals different facets depending on the brewing method: a delicate sweet-tart character as espresso, a velvety texture with milk, and a nuanced, complex experience as filter coffee.
Espresso: a lively yet controlled bite and a creamy texture, striking a beautiful balance between sweetness and elegant acidity.
Milk-based drinks: a concentrated dose of comfort! Candied apple aromas shine through in a cup that's both complex and inviting.
