TASTE
A Brazilian coffee with a silky body, carried by a deep chocolate character. In the cup, it evokes pecan pie, with a generous and comforting sweetness. The profile remains classic and approachable, but gains complexity through a fruitier finish, reminiscent of yellow plum, that brings a touch of brightness to the whole.This is a round, clean and generous lot, with just enough depth to move beyond the most expected Brazilian profile, while keeping its warm and familiar character.
ORIGIN
Founded in 1974, Fazenda Agropesg first focused on several crops, including coffee, corn, soy and wheat, before gradually shifting more of its attention toward coffee production starting in 1997. In 2021, Cassio Yamamoto, son of Ernesto Yamamoto, returned to the farm to oversee its specialty coffee production.
Since then, the team has continued to improve its work, both in agricultural practices and in processing and drying methods. This lot of Paraiso MG2 is a good example: the cherries were manually harvested over a defined period, then depulped before being patio-dried in thin layers, gradually deepened to slow the drying process. The coffee was then piled near the end of drying to even out moisture before resting and dry milling.
The result is a clean, structured pulped natural coffee, typically Brazilian in its roundness, but lifted by an aromatic complexity that reflects the meticulous work done at the farm.
BREWING
As an espresso, this coffee is classic, warm and slightly adventurous all at once. It will please latte lovers thanks to its sweetness and chocolate notes, which carry beautifully through milk. Pulled slightly shorter as a double espresso, it offers a silky texture and a dense, comforting cup.
As a filter coffee, it produces a deep, aromatic and well-balanced cup. Its roundness also allows for a more concentrated extraction or a slightly finer grind, while maintaining a pleasant sweetness. It is the kind of coffee that can be enjoyed black, or with a touch of milk and sugar in the spirit of a classic morning cup.
In its summer version, this lot shines just as much as a cold brew or iced espresso, and makes an excellent base for an espresso martini.
