    TASTING PROFILE

    A generous, sweet and warming cup that once again highlights Alejo Castro’s craftsmanship. Volcancito brings together several cultivars from the Volcan Azul farm, capturing the full aromatic depth of this terroir. Expect a vivid blackberry note right from the first sip, followed by a syrupy body filled with dark stone-fruit character reminiscent of black plum. The finish is gently spiced and gourmand, evoking the comfort of winter desserts and warm baking spices

    ORIGIN

    The Castro Kahle family has been rooted in Costa Rican coffee since the 19th century and is known for its strong agronomic approach. Today, Alejo leads Volcan Azul with remarkable consistency and precision across a range of processes, from washed to natural to anaerobic fermentations.Volcancito is a unique assembly that combines portions of several cultivars from the farm, sometimes including components from more exclusive lots. Because these varieties have different densities, they dry at different rates on the patios. This controlled heterogeneity creates layered aromatics and a complexity rarely found in single-varietal coffees.

    DRINKING 

    As an espresso, it offers low acidity and a round, comforting texture. It pairs especially well with milk, where the fruit tones soften and the sweet spices come forward. For filter brewing, its density and natural process benefit from a slightly finer grind than usual to bring out the full sweetness and syrupy texture without losing the clarity of the dark fruit.

    Time : 28-30 sec.

    Drip parameters:
    Ground coffee : 15 g.
    Resulting quantity : 220 g.
    Temperature : 91 C.
