    TASTING

Where are we going? Certainly, to the very edge of what we call coffee. Tropical aromas unfold on the nose, enveloping the senses in a cascade of stone fruit from the very first sip. This remarkable demonstration of how fermentation transforms the Castillo variety astounds us with deep lychee flavors. A silky layer of pureed peach embraces the palate, while a citric acidity evokes childhood memories of gummies, like those tangy watermelon candies. A coffee that flirts with the boundaries of its identity, offering extravagance and exotic aromas we are thrilled to savor!

    ORIGIN

Having co-founded Finca El Paraíso with his brother Alexander in 2008, Diego Samuel Bermúdez Tapia has become a pioneer in experimental fermentation techniques. What sets Finca El Paraíso coffee apart is Diego Bermúdez's unwavering commitment to innovation in processing. Each coffee undergoes a groundbreaking biocatalytic process, where specific micro-organisms are introduced during fermentation to craft intricate and precise flavor profiles—like the one in this exceptional batch.

The process begins with coffee cherries hand-picked at peak ripeness and disinfected. They then undergo a 36-hour anaerobic fermentation in stainless steel tanks, followed by a second fermentation stage with added micro-organisms to fix the flavor precursors. After fermentation, a heat shock locks in these flavors, while precise drying with dehumidifiers preserves the coffee’s vibrant acidity and sweetness. These highly controlled, innovative methods allow Finca El Paraíso to consistently stand out, delivering coffees that are nothing short of extraordinary!

    DRINKING

This coffee is a must-try for filter extractions! Its balanced intensity and syrupy texture bring its aromas to life, offering a delightful exploration of the wonders of fermented coffee. As an espresso, it’s an explosion of tangy candy-like flavors, paired with a sweetness so pronounced you might think you’re sipping on a bag of Maynard's! Bold and unconventional, it’s exactly what we’re looking for.

This coffee also shines in milk-based beverages, effortlessly transforming traditional lattes—think cortado—into a sweet peach sorbet. With oat milk, it takes on a radiant quality, preserving an unparalleled acidity that perfectly reflects its name: Lychee Peach.Adventure awaits!
