Having co-founded Finca El Paraíso with his brother Alexander in 2008, Diego Samuel Bermúdez Tapia has become a pioneer in experimental fermentation techniques. What sets Finca El Paraíso coffee apart is Diego Bermúdez's unwavering commitment to innovation in processing. Each coffee undergoes a groundbreaking biocatalytic process, where specific micro-organisms are introduced during fermentation to craft intricate and precise flavor profiles—like the one in this exceptional batch.
The process begins with coffee cherries hand-picked at peak ripeness and disinfected. They then undergo a 36-hour anaerobic fermentation in stainless steel tanks, followed by a second fermentation stage with added micro-organisms to fix the flavor precursors. After fermentation, a heat shock locks in these flavors, while precise drying with dehumidifiers preserves the coffee’s vibrant acidity and sweetness. These highly controlled, innovative methods allow Finca El Paraíso to consistently stand out, delivering coffees that are nothing short of extraordinary!
